Grow Eggplants from Seed
Growing Eggplants: The eggplant is a member of the potato family, and is also known as a garden egg, melanzana or aubergine. There are many varieties and colours ranging from dark purple to pale mauve, yellow to white. Eggplants are sensitive to cold and require a long warm season for best yields. They are best started indoors and later planted in the garden from transplants. Transplant after the soil has warmed and the danger of frost has passed. Space approximately 16 - 20 inches apart. Once eggplants are well established they will continue to thrive; even in extreme heat as long as they are given plenty of moisture and fertilizer. Harvest the fruit while it is still young, tender and glossy, using pruning shears. Eggplants do not store well so it is best to use them immediately. They can be grilled, baked, sauteed, steamed or frozen.
